I have seen several versions of Castle Cake Design which I use as inspiration for this cake.
I cannot specify a particular one as this is not a copy of any actual cake design.
The carriage idea came from a magazine ad.
This design can be modified for more than one tier cake.
How to make an EDIBLE CASTLE CAKE TOPPER
The Castle Tower Cake Topper can be prepared 1 to 2 weeks ahead.
There are several methods for creating an edible Castle Turret.
I provided only two methods in this tutorial
Method 1: Create a Hollow Turret using a Cylindrical Mold Method or
Method 2: Create a Turret made of fondant/gumpaste Method
Here's another way that you might be interested to try:
Create a Turret using Styrofoam or RKT (Rice Krispy Treats) covered with fondant Method -
Create a Turret made of Fondant or Gumpaste
Make the Pointed Roof of the Castle Turret
Roll a cone shaped fondant of varying heights.
You may design the pointed roof as you wish.
I provided two options here:
Option 1 (Simple Roof) or Option 2 (Roof With Decor "Shingles")

Follow the steps in Option 1.
To make the "Shingles",
Roll out the fondant flat about 1/8" thick.
You may use an impression mat to create a design on each circle or you can leave smooth.
Now with the use of a small circular cutter, cut a number of circles out of the fondant.
Attach the circles "shingles" to the pointed roof using an edible gum glue, as show in the picture.
